SWEET POTATO AND PEAR CASSEROLE

 

½ cup brown sugar

¼ tea. salt

¼ tea. cinnamon

3 large sweet potatoes, peeled, cut to fit food processor feed tube

3 medium Bosc or Barlett pears, peeled and cored

3 tab. margarine or butter, cut up

 

     In small bowl, mix brown sugar, salt, and cinnamon.  In food processor with slicing disk attached, slice sweet potatoes and pears; transfer to large bowl.  Toss with margarine and 2 tab. sugar mixture.  (Don’t worry if dish is filled to capacity.)  Cover dish with foil and bake 425’ for 45 min or until potatoes and pears are fork tender.  Remove dish from oven and turn control to broil.  Remove foil and sprinkle remaining brown sugar on top.  Broil, uncovered 5 min. or until sugar mixture is bubbly.
