FRUIT BRANDY  Joe Guarino

 

3 gal. water

10 lbs. sugar

4 qts. fruit

3 lemons, juice only

1 large cake of yeast

4 boxes white raisins

 

     Boil the water and sugar together.  Cool.  Using a crock, mix together the fruit, lemon juice and yeast.  Add sugar mixture to fruit.  Mix every day for 7 days; at the same time each day.

     At the end of 7 days add 4 boxes of white raisins.  Let stand for 21 days, covered.  DO NOT MIX.

     After 21 days siphon into another crock.  Let stand 7 days, uncovered.  Then siphon into bottles.  Note  If making cherry brandy or other fruit containing pits; remove pits.
