TARRAGON BUTTER

 

1/2 cup butter, softened

1/4 cup fresh tarragon leaves (or basil, thyme or dill), chopped

1/8 tea. fresh lemon juice

dash pepper

     In a small bowl or on Handi Wrap mix all ingredients with a fork until well blended.  Shape into a log; wrap in plastic wrap.  Refrigerate for a week or freeze for several months.  Slice into pats and use on fish, poultry, vegetables, pasta and bread.

 

ROSEMARY-THYME

 

1/2 cup butter, softened

1 tab. finely chopped fresh rosemary leaves or 1 tea dried, crushed

1/4 tea. white pepper

     Good on corn on the cob.

 

LEMONY CHIVE

1/2 cup butter, softened

2 tab. minced chives

2 tab. minced parsley

2 tea. fresh lemon juice

     Mix, let stand 1 hour before using.  Good on corn on the cob.
